So here it is – the admission of my unconditional love for Sainsbury’s white chocolate and raspberry cookies.

Crispy edges, soft and buttery middle, big chunks of milky white chocolate and bursts of tart raspberry – what’s no to love?

Nothing a quick update to my trusty go-to cookie recipe couldn’t fix though!

The perfect combination of crunchy, chewy & gooey, big chunks of chocolate and tangy raspberry with none of the nasties… Those raspberry & white chocolate cookies are possibly even better than the original!

Absolutely perfect if people suddenly decide to pop round for a cuppa. You can whip them up in a few minutes, pretend you slaved away in the kitchen for hours and get all the cookie points!

Seriously, get this recipe under your belt & you’ll never want a store bought cookie again – sorry Sainsbury’s!

They’ll keep in a tin for about a week but they’re berry addictive so good luck with that!

Simple Pink Fruit Salad (V, Vegan)

When I scroll through restaurant menus online (everyone has their passion eh?), I’m always shocked by how expensive fruit salad are. You want me to pay HOW MUCH for some chopped up fruit?? Are they made of gold or what?

And then I started making fruit salad at home and found out why that is.

Because you see, fruit salad are a bit more finicky that they seem. As it turns out, prepping fruit takes forever. Washing, drying, peeling, chopping, segmenting… There’s no shortcut to be used and the technical skills needed to make the perfect fruit platter are very demanding. Plus, unlike many desserts, fruit salad cannot be made in advance.

As for many of life’s finest things, simplicity truly is the ultimate sophistication, and a beautiful fruit bowl is difficult to top for a light, refreshing breakfast or dessert. So I suppose in a way, it’s worth the premium restaurants make you pay for it.

Especially when it’s as easy to make as these Raspberry Wine Spritzer!

Raspberry Wine Spritzer is the lazy alternative to Sangria.

Less ingredients, less prep time but that same ‘summer in a glass’ vibe!

Serve in your favourite patch of sunshine, sit back, smile and relax!

Truly the ultimate summer drink!

Raspberry Wine Spritzer (for 1 glass)

Ingredients: 80ml Black Raspberry Sparkling Ice Sparkling Water (chilled), 150ml chilled rosé wine (I used Côtes de Provence), 4 ice cubes, berries to serve

1. In a large wine glass, place the ice cubes and a few berries (I used blueberries).

2. Pour in the rosé, then top with Black Raspberry Sparkling Ice.

3. Garnish with yet more berries (redcurrants here) and serve immediately.

PS: If you want to make a big batch (for a party for example), simply combine the wine and Sparkling Ice water into a large drink dispenser and serve ice and berries on the side for your guests to garnish their own drinks.
