Bankside is one of my favourite parts of London.

Home to the fantastic Borough Market and some of my favourite restaurants in the city, Bankside is a fantastic destination for dinner and weekend meanderings alike.

And in October, things are getting even more exciting along the Lowline with the launch of the Bankside School of Food and Wine!

To celebrate Bankside’s emerging food scene, various venues are holding a range of food and drink workshops.

From doughnut making to butchery classes, chocolate workshops and mixology lessons, there’s a lot to choose from.

But you know me, I’m never one to say no to a good cocktail!

Which is how I found myself in Mark’s Bar at Hixter Bankside for a hands-on British cocktail masterclass.

After a Hix Fix (a delicious mix of cherry liquor and English sparkling wine and the best selling cocktail across all Hix restaurants) on arrival, it was time to get down to cocktail-mixing business!

First things first – a quick refresher on the history of cocktails, must-know techniques used in cocktail making and of course, the provenance of the spirits!

Much like for the food, the approach to cocktail making focuses on local, seasonal ingredients such as Black Cow vodka – the world’s only Pure Milk Vodka™.

Made entirely from the milk of grass grazed cows in West Dorset, it makes for an exceptionally smooth vodka with a unique creamy character.

After eagerly tucking into delicious bar snax (the signature Yorkshire pudding with whipped chicken livers is an absolute must-order!), it was time to recreate some of Mark’s Bar’s renowned cocktails.

First up on the cocktail menu – the Dorset Donkey (a British take on the classic Moscow Mule).

Made with the freshest seasonal produce (blueberries in the summer, blackberries in fall and preserved Morello cherries in the colder months), it’s a great drink to mix for impromptu guests any time of the year.

All you have to do is crush a couple of Morello cherries and sage leaves at the bottom of a highball glass.

Top with 20ml lime juice, 50ml Black Cow vodka, 10ml cherry brandy and 15ml honey or sugar syrup.

Fill the highball glass with ice cubes.

Top with ginger ale.

Garnish with a Morello cherry and 2 sage leaves and you’re all done!

Substitute the sage for orange peel, add a cinnamon stick and you’ll have yourself a smashing Christmas cocktail.

The perfect way to get into the holiday spirits!

Unless of course you’re more of an Espresso martini kind of gal/guy!

I have it on good authority that Mark’s Bar serves one of the best in London.

So might as well learnt from the masters!

It’s actually not that difficult either.

For 1 glass, you’ll need:

  • 50ml Black Cow vodka
  • 50ml fresh ground coffee or a double espresso
  • 35ml honey or sugar syrup
  • coffee beans to garnish

Pour all the ingredients into the smaller half of a shaker, add cubed ice and shake vigorously for 10-15 seconds.

Strain into a champagne coupe and garnish with three coffee beans.

A brew-tiful drink indeed and one well worth learning for yourself!

My favourite was the Seven Flowers, a citrusy mix of Haig Clubman scotch, elderflower syrup and lemon juice, all topped with Champagne.

Sweet, sour and incredibly elegant.

And incredibly easy to make, should you want to give it a go: just pour, shake, sieve and serve!

Lobster Masterclass at L’Ecole du Goût, Saint Malo

I rarely buy (or cook) seafood.

Partly because they’re rather pricey little buggers, partly because they are quite a bit of work (and as you all know by now, I’m lazy).

And more importantly, because I’m totally lacking the technique to be sure that my investment (both in terms of time and money) will be worth it.

But this all changed after our first morning in Saint Malo and a (cooking) life-changing lobster masterclass with Luc Morbihan, chef of Michelin-stared restaurant Le Saint Placide.

While the friands where baking, we moved onto the lobster.

In short, a good lobster is a live lobster, with long antennas, strong claws and a head that’s well attached to the body (with no gap inbetween).

We prepped the lobster before learning how to cook the tail and claws, as well as make a lobster jus.

The tail must be cooked in just-boiling water for no more than 5 minutes, before being cooled down and de-shelled.

I must admit I’m a bit of a Jamie Oliver fan-girl: the books, the TV shows, the YouTube channels, the food… I love it all. And yet, I had never been to any of Jamie’s restaurants. Shocking, I know.

So when a lil’ email popped into my mailbox, inviting me to an exclusive butchery masterclass at fire-and-meat focused Barbecoa, I was very excited to say the least!

Topping it all of with refreshing little shoters of rhubarb sorbet. The perfect way to balance of a rather rich meal (canapés are a legit meal, right?)

Barbecoa definitely lived up to its reputation of cathedral of meat & fire and the perfect introduction to Jamie Oliver’s restaurant empire. Now I simply can’t wait to discover more!

Pizza Masterclass at Pizza Rossa with Yelp

It seems pizza is always better when you get it from outside (as opposed from making it at home). Or is it just me? Either way, I was determined to get to the bottom of it (and hopefully learn a few tricks along the way)!

So last week, I joined a group of overexcited Yelpers (because PIZZA!) for a pizza masterclass at Pizza Rossa.
Cake + Whisky | Pizza Masterclass at Pizza Rossa with YelpI was a bit early, so I walk around Leadenhall Market for a while and took in the views (did I ever tell you about this weird obsession of mine with The City’s buildings?) before heading to Pizza Rossa. “Passion by the slice” the sign said. Good sign (geddit?). I believe people who love what they do always do it better. Time to taste-test my theory (and my pizza-making skills, obviously!). Cake + Whisky | Pizza Masterclass at Pizza Rossa with YelpEverybody was handed glasses of wine (when in Italy, party like the Italians!) and we got stuck in. After being told about how Pizza Rossa all started out and being promised we were going to make the lightest pizza dough of all times, it was time to get our hands dirty!Cake + Whisky | Pizza Masterclass at Pizza Rossa with YelpAs for all good things, it started with flourCake + Whisky | Pizza Masterclass at Pizza Rossa with YelpTrying really hard the urger to start a flour fight there!

But then we added yeast, and that’s when it all got a bit lot more… sticky!Cake + Whisky | Pizza Masterclass at Pizza Rossa with YelpResulting in me having to go halfsies with my partner, whose dough was too dry, for the two of us to have more managable balls of dough! From then on, our newly separated siamese pizza dough babies behaved (we were both really proud)!

All it took to finish the prep was a bit of oil and some salt. And of course, that’s when my phone decided to stop working. Which might be for the best as you won’t be able to tell how many slices I’ve had…

I have no picture to prove how delicious everything was, but take my words on it and next time you’re in the City for lunch (or dinner, or anytime inbetween really!), just go get yourself a few slices (my favourite was the prosciutto & butternut squash one!)!

I, however, went home with my own little pizza dough ball (which wasn’t little at all!). So I had to make more pizza (oh no!). And I can tell you, making pizza with your fingers crossed (hoping for it to be as delicious as the ones I had the day before) is not easy!Cake + Whisky | Pizza Masterclass at Pizza Rossa with YelpEither I was lucky or I’m some sort of pizza genius because the dough ended up being so fluffy and soft! Or maybe I was just taught really well! Rolling it was a bit challenging but really fun since air bubbles were desperately trying to kind their way out!

The pros at Pizza Rossa advised to follow several steps to bake your pizza. First you roll the dough out and bake it for about 4 minutes at a really high temperature (250 °C).
