I don’t really know what’s up with me, but I seem to have caught the cucumber bug.
As in, I’m absolutely obsessed with anything cucumber. Cocktails, mocktails and all the cucumber salad combinations, I simply can’t get enough of it.
As a consequence, my current lunch of choice is this super-refreshing, simplified Greek-style, summery cucumber, feta & pomegranate salad.
Perfect for a fast and fresh meal or as a side alongside barbecued meat or halloumi, it’s the ultimate cool-as-a-cucumber dish!
