Eggs any way, bread (all the bread!), full English, porridge… I love it all!

But, I love my bed even more.

  1. They look intricate but are actually deceptively easy to put together.
  2. They require few ingredients, and preferably some I already have in the fridge/cupboard.
  3. They feel indulgent but are actually good for you.

Such recipes are good to have around any time of the year, but especially so during the festive period.

When you’re already running around like a headless chicken, desperatey trying to get a present for everyone on your list, wrapping them all and writing Christmas cards whilst managing a busier-than-usual calendar, feeding oneself with good, nutrient-rich food often steps back in favour of a mince pie-based diet.

Quick & easy to make, they make for a filling lunch, a light dinner or an brunch dish.

And, they’re absolutely egg-straordinary if you’re trying to knock a (festive or not) hangover out of the park!

I’m a breakfast-for-every-meal sort of girl.

Most days, that means endless slices of buttered toast and bottomless cups of tea.

But my prefered option remains a cooked breakfast or -even better yet- an egg-focused brunch feast.

Now, I know brunch has been taking the restaurant world by storm these past few years. But in my opinion, the best ones are the ones you cook at home.

Pyjamas on, sleeves rolled up, slurping the largest cuppa known to man as you go.

First things first: make a hollandaise sauce.

Here’s what you’ll need for two:

  • 2 egg yolks
  • 2 capfull white wine vinegar (this one is a-ma-zing!)
  • 100g unsalted butter, cubed
  • sea salt to taste

Start by whisking together the egg yolks and vinegar in a small bowl.

Place the bowl over a double boiler and whisk it continuously until it starts thickening.

You’ll want to keep the temperature under control so the yolk doesn’t overcook.

When your whisk starts leaving marks, reduce the temperature further and whisk the butter in cube by cube.

Remove the hollandaise from the heat and season with more vinegar and salt.

… and maybe a little bit of the good stuff if you’re feeling fancy!

Set aside and get cracking on your poached eggs.

You’ll need to make two per person and the fresher the better (hint hint)!

In a large, deep saucepan, heat up about 4 inches of water to a small boil, then reduce the temperature slightly.

Crack your eggs and place each one in a small recipient, leaving the very liquid part of the white behind.

Use your whisk to create a deep vortex in the middle of your saucepan.

Once the surface of the water is almost back to being flat, lower one egg into the water and cook for about 3min.

Remove the egg with a slotted spoon and repeat with the remaining eggs.

Meanwhile, get everything else ready.

Toast your muffins, slice your avocado, fry your bacon…

Pile your toppings of choice onto the English muffins.

I love breakfast.

Especially when I’m not the one cooking it.

Because you see, it rather gets in the way of getting an extra 20 minute sleep.

So, in my house, it’s really just bread and butter, with a little jam if you really insist and scrambled eggs for big occasions only.

But the truth is, a healthy, balanced breakfast isn’t that complicated or time-consuming a thing!

As I recently found out at an event hosted by Very Lazy and Sally Bee at Food at 52, a few very lazy breakfast recipes and some clever Very Lazy shortcuts are all it takes to cook fuss-free, delicious and nutricious breakfasts quickly!

First things first: Spicy ginger and apple tea.

A warming hot toddy-style drink combining the antioxydant benefits of ginger and immune system-boosting chilli pepper and lemon.

Perfect to get you energised from the get-go and kicking off any seasonal cold symptoms while it’s at it – and super easy to make too!

In a large saucepan, mix together 750ml of water, 750ml of apple juice, 3 tsp of Very Lazy ginger paste, the juice of 1 lemon, a pinch of Cayenne pepper, 1/2 tsp of cinnamon and 3 tbsp of runny honey. Simmer for 5-6 min and serve warm.

Next up, the plat de résistance – Mexican-inspired butterbean baked eggs.

A truly egg-straordinary, simple, warming & filling autumnal breakfast with a bit of a kick!

And because all breakfasts should have a pudding course – Hazelnut, apple and berry ginger cake.

Scrummy, delicious and simple too!

(Though it’s better if you make this one the night before so it doesn’t take up too much of your much deserved beauty rest)

First, pre-heat the oven to 180°C (gas mark 6) and line a large baking tin with baking paper.

In a large bowl, combine 275g self-raising wholemeal flour, 2 tsp baking powder, 175g rolled oats, 125g soft brown sugar and 1 tsp cinnamon.

In a separate bowl, whisk together 150ml light olive oil, 175ml Greek yoghurt, 2 eggs and 5 tsp Very Lazy ginger paste. Add the wet mix to the dry ingredients and mix well.

Pour half the mixture into the prepared tin. Sprinkle with two finely chopped apples and 150g frozen berries. Top with the remaining cake mix and spread evenly.

Top with 50g chopped hazelnuts and a little bit of demerara sugar and bake for 30-40 min until golden.

Served warm with a big spoonful of yoghurt on the side.

Spiced tea, baked eggs and cake – a very good breakfast if I ever saw one!

I am not a morning person.

Needless to say that, the ol’ ‘sleeping a few more minutes vs breakfast’ dilemna isn’t really a thing in my house.

And -if I’ve been organised enough- grabbing a jar of homemade bircher muesli from the fridge before running out of the door to make it to the office on time.

As far as I’m concerned, bircher muesli is a bit of a life (and growling belly come 10am) saver.

It takes minutes to make (and you can do it while watching TV and then there’s nothing left to do in the morning!).

Plus it’s super healthy (hello, protein, complex carb, good fat and vitamin powerhouse!) and SOOOO satisfying.

Quite honestly the berry best on-the-go breakfast around!
