November isn’t quite my favourite time of the year.

Weirdly enough, I’m not really into that whole ‘night time at 3 O’Clock with heavy risk of frozen rain’ situation.

Like a big, hot, comforting cup of spiced lentil soup.

Vegan, seasonal, hearty and very cheap, it’s packed with vitamins and good stuff.

You can make boatloads at a time (perfect for packed lunch and those evenings when you just want to collapse on the sofa and go on a Nexflix marathon!) and it’s super easy too!

Absolutely souper all round!

Indian Spiced Lentil Soup (Vegan) • Recipe • Cake + Whisky

Indian Spiced Lentil Soup

Yield: 1

Ingredients

  • 50g coral lentils
  • 1/2 clove garlic, finely chopped
  • 1/4 tsp ginger, finely chopped
  • 1/4 onion, roughly diced
  • 1/2 can chopped tomatoes
  • 250ml water
  • 1 tsp curry powder
  • 1/4 tsp chilli powder (or to taste)
  • pinch of curry leaves
  • 1 tsp olive oil
  • salt, pepper

Instructions

  1. In a saucepan, heat up the oil on medium heat.
  2. Add in the onion, garlic and ginger and cook, stiring regularly, until lightly golden.
  3. Add in the lentils and spices and cook for a couple of minutes.
  4. Pour in the tomato sauce and water, reduce the heat to low and cook for another 10-15 minutes or until the lentils are soft.
