There are weeks where everything works the way it should.
And then, there are weeks when you need a cocktail by 11am on Monday morning.
This week is of the later sort.
But because I still have to go through the rest of the week with a clear head, this was sort of a no-go.
So, mocktail it was.
After a quick fridge forage, I came up with this delicious Pineapple Fizz little number.
It’s super refreshing on hot days and a much healthier alternative to sugary sodas.
And, of course, it’s super quick & easy to prepare, whether you’re making it just for you or for a crowd, making it the perfect choice for tough Mondays and alcohol-free cocktail hour too!
Really quite a fine-apple if you ask me!
- 100ml pineapple juice
- 100ml sparkling water
- 10ml ginger syrup
- sprig of fresh mint
- Pour the ginger syrup in a tumbler glass.
- Add the pineapple juice and stir lightly with a cocktail spoon or straw.
- Add in a few ice cubes, top with sparkling water.
- Garnish with a fresh mint sprig and serve immediately.
If you're making this for a crowd, i find it easier to pre-mix the ginger syrup and pineapple juice in a jug, and top with soda water as you go.
